Yellow teas are expecially rare Chinese teas with similar characteristics of green and white teas. Yellow teas are teas processed similar to green teas with an additional step of heating the green leaves in a closed humid container to yellow the chlorophyll in the leaves. This additional process creates a tea which taste mellow yet brisk.
